Razor clams with tomato and ginger

This recipe was created by “The Foodpairing® Company” based on the taste profile of Scotch. It is perfect for this red beer with a scent of spices, caramel and some light fruity notes. It stands out from traditional Scotch ales as it offers a fine woody scent reminiscent of hazelnut.

Serves:4

Ingredients:

  • 8 Razor clams
  • 1/2 red onion, diced
  • White wine
  • Tomatoes: 30gms, diced
  • Candied ginger
  • Chives, finely chopped
  • 1 Lemon
  • 2 tbsp mayonnaise
  • Soy sauce, to taste

Procedure:

  • Step 1: Fill a pan with a little water and bring to a boil. Make a longitudinal incision in the razors and put them forten seconds in boiling water. Remove the meat from the shells and remove the entrails. Set the shells aside for serving. Cut the flesh into cubes
  • Step 2: Put the red onion in a pan and cover it with white wine. Let the wine evaporate over low heat. Cool off.
  • Step 3: Mix 50 gms razor shell with 30 gms tomato, 20 gms of cooked red onion, candied ginger and chives. Add some freshly grated lemon zest and juice. Season with olive oil, salt and pepper.
  • Step 4: Mix mayonnaise with soy sauce to create the perfect accompaniment.
